Kefir and yogurt and cucumber gazpacho

You can feel good about what you are eating and boost your immune system at the same time! Let's make a batch of cucumber gazpacho with all the healthy benefits of kefir and yogurt.

This cold soup is refreshing and hydrating. Cucumbers rehydrate your body, and kefir adds energizing B vitamins to revitalize you in the afternoon. Kefir and yogurt are full of good bacteria, they only have different strains, so they complement each other. If you have not tried Gazpacho yet, a gift awaits you. What do you need:

4 cucumbers
1 cup yogurt, fat-free
1 garlic clove, minced
1 tablespoon of fresh dill
Juice of 1 lemon (about 2 tablespoons)
Sea salt, pepper
1 cup of kefir
Tomato juice or V-8 juice (optional)

Peel the cucumbers. Cut them lengthwise and scoop out the seeds and discard them. Cut the cucumber into small pieces and put in the blender. Mix until smooth.

Add the yogurt, garlic, dill, and lemon juice and mix until smooth.

Now add sea salt and pepper to taste. Add the kefir until creamy. If desired, add tomato juice or V-8 juice to taste, or if others don't like tomato in their gazpacho, simply add it to individual cups. Chill the soup in the refrigerator for a few hours.

This is good for leftovers for a few days. So if you don't have time for lunch, do it the day before and it will be ready waiting for you. It will keep you cool, hydrated and alert the rest of the day!
